In 2012, Dare 2 Dream Farms was a new farm, taken under-wing, if you will, by the backyard chickens movement and all it’s splendidly green-loving people. Our farm was lifted up, and our little dream took flight, allowing us to dream up more dreams such as one day growing our own fresh produce, and maybe even helping others to do the same.
We have been working hard for two years to develop the newest facet of the farm: preparing new no-till garden beds, planting pollinator gardens, building a wash station, protecting the growing area with fencing, and learning what thrives in our unique canyon. This year, we were blessed with enough crowd-funding to build a cold and dry storage unit where we can now properly store all the wonderful things we harvest. This is our second year offering Community Supported Agriculture memberships, a beautiful box of fresh veggies every week, to locals in Lompoc.
Thus far, our original egg logo has perfectly represented the foundation of our farm: multi-colored eggs from our free-range laying hens, our backyard chickens, our handcrafted chicken coops, and the packages of poultry supplies we offer.
Our new Rad-Radish Logo represents all that grows from the ground at Dare 2 Dream Farms. As we present this new logo, we also present the newest side of our farm that includes:
- CSA Memberships A weekly box of fresh vegetables, fruits, herbs, and flowers based on seasonality and harvested for optimal freshness.
- Farm-to-Table Dinners & Events All dishes are prepared in house using only ingredients from the farm or locally sourced for a farm dinner open to the community or private events.
And in the future, will include:
- Farmers Markets
- Cottage Foods
- Urban garden set-ups: raised beds, potting soil, compost, and seeds
To celebrate, we offer you this Rad Radish Recipe: Radish Cakes! Traditional radish cakes, also often referred to as turnip cakes, are served auspiciously on New Years to bring success and fortune. Similarly, we intend for these fresh vegetarian radish cakes to bring the same to you and to our newest venture.
- One bunch radishes, grated
- One Persian cucumber, seeded and grated
- One small fennel bulb, grated
- 1/2 cup red onion, thinly sliced
- 12 oz artichoke hearts, thinly sliced
- 2 cloves garlic, minced
- Salt & Pepper
- Olive Oil
- Bread Crumbs
In a large bowl, combine radishes, cucumber, fennel, onion, artichoke hearts, and garlic. Wring out the moisture using a cheese cloth. Add a dollop of mayonnaise and stir together. Season with salt and pepper.
Form 3 inch round, 1/2 inch thick cakes. Dip them into a bowl of bread crumbs (we recommend panko). Put one tablespoon of olive oil into a hot skillet and cook the cakes on the olive oil. They should cook fairly quickly, about one minute per side. Plate with a wedge of lemon and enjoy!
